Pulled Chicken Bowls with Sweet Potatoes and Rice

Ingredients
  

  • Salt to taste
  • Black pepper to taste
  • Seasoning of choice e.g., garlic powder, paprika, or all-purpose blend
  • Chicken thighs
  • 2 cups bone broth plus additional as needed
  • 2 cups rice
  • Sweet potatoes
  • Butter for mashing

Method
 

Prepare the Sweet Potatoes
  1. Peel and chop the sweet potatoes into evenly sized pieces.
  2. Place in a pot of water and bring to a boil.
  3. Cook until fork-tender.
  4. Drain and transfer to a large bowl.
  5. Mash with butter, salt, and pepper. Adjust seasoning to taste. Set aside.
Cook the Chicken
  1. Trim excess skin and fat from the chicken thighs using a sharp knife.
  2. Season both sides with salt, pepper, and your preferred seasoning blend.
  3. Heat a pan over medium heat and sear the chicken thighs until browned on both sides.
  4. Transfer the chicken to an Instant Pot and add 2 cups of bone broth.
  5. Cook on the standard (high pressure) setting for 14 minutes.
  6. Once finished, remove the chicken and place on a rack to drain excess liquid.
  7. Refrigerate until cool enough to handle.
Cook the Rice
  1. Add 2 cups of rice to the Instant Pot.
  2. Use bone broth in place of water for added flavor (follow a 1:1 or appropriate ratio for your rice type).
  3. Cook using the rice setting (approximately 13 minutes).
Shred the Chicken
  1. Once cooled, remove the chicken from the refrigerator.
  2. Using clean hands or gloves, remove bones and discard.
  3. Shred (pull) the chicken into bite-sized pieces.
  4. Transfer to a large bowl and mix with additional seasoning or barbecue sauce, if desired.
Assemble the Bowls
  1. In each meal prep container, add:
  2. 1 cup mashed sweet potatoes
  3. 1 cup pulled chicken
  4. 1 cup cooked rice
  5. Portion evenly and store as desired.

Notes

  • Adjust seasoning and sauce based on preference.
  • Bone broth enhances flavor but can be substituted with water if needed.
  • These bowls are ideal for meal prep and can be refrigerated for several days.
