Method
- Ensure your smoker is clean and ready for use.
- Prepare the fuel by filling the charcoal basket or firebox with charcoal.1 bag Hardwood charcoal
- Set up for moisture by filling the water pan with hot water.1 pan Hot Water
- Establish airflow by opening the vents fully to start. This allows the smoker to reach your desired temperature.
- Add wood chips once the smoker reaches the proper temperature.1 cup Wood chips of your choice
- Stabilize the temperature by adjusting the ventilation/dampers.
- Add your meat or other ingredients to the cooking grate once you have achieved a clean-burning fire.
- Smoke to your desired doneness.

Do this the day before to make life simpler on the day of smoking!
An ideal temperature can be around 225-250℉.
